How to Store Sugar Flowers So They’re Still Perfect on Wedding Day

Whether you've ordered ready-to-ship designs or custom creations, these guidelines will help ensure your sugar flowers arrive for your wedding day in pristine condition.
Defining Sugar Flowers
For this blog post, the sugar flowers we’re discussing are made with gumpaste— an edible clay-like paste made with sugar, egg whites, and a thickener such as CMC or gum tragacanth. Sugar flowers made with other materials, such as fondant or modeling chocolate, will need different storage guidance.
Store in a Cool, Dry Environment
Temperature and humidity can make or break your sugar flowers. Sometimes literally.
Keep them in a cool space between 65–72°F, away from direct sunlight, heat sources, and humidity.
Avoid garages, bathrooms, and areas near windows where temperature fluctuations occur.
Ideal storage conditions could be a bedroom closet, climate-controlled storage room, or kitchen pantry.
High humidity can cause sugar to soften and colors to bleed, so especially if you live in a humid climate, consider using silica gel packets and/or a small dehumidifier near your stored sugar flowers.
Use Airtight Containers
Store your sugar flowers in airtight boxes or containers to protect them from dust, moisture, and accidental damage.
You can line your container with something soft so they don’t chip against the hard side of the box.
examples of padding include tissue paper, paper shred, bubble wrap, soft foam, paper towels.
Also add padding between any flowers that may be touching in the container. If flowers are stacked, separate layers with more padding. This prevents petals from chipping against each other, colors from transferring, and keeps each bloom protected.
Keep Away from Strong Odors
Sugar flowers are porous and can absorb odors from their surroundings. They also contain oils or grease such as vegetable shortening, which can become rancid if stored incorrectly.
Store sugar flowers away from perfumes, cleaning products, cooking spices, and other strong-smelling items. A dedicated storage box in a neutral-smelling closet is ideal.
Using food grade essential oils or flavorings such as rose water extract can enhance the smell of sugar flowers, too!
Handle with Care During Transport
If you're transporting sugar flowers to your venue, use a sturdy box with padding.
Wrap individual flowers loosely in tissue paper and cushion the box with bubble wrap or foam.
Keep the box level during transport and avoid placing heavy items on top of the box. If possible, transport flowers in a temperature-controlled vehicle rather than a hot trunk.
How Long Sugar Flowers Can Be Stored (Ideal Shelf Life)
Sugar flowers are shelf stable, due to the materials used to make them and the lack of moisture they contain.
Because of this, sugar flowers can be stored for shorter or longer periods of time. For example, you can order your sugar flowers ahead of time, much sooner than the two to three weeks before your event that you would for fondant or marzipan cake toppers.
This long shelf life also makes sugar flowers ideal for keeping as mementos from your wedding day. We’ve worked with customers who have kept their sugar flowers for decades!
Sugar Flowers on Your Wedding Day
Sugar flowers are made to be durable and withstand the environment of a wedding day.
The moisture from a wedding cake may cause the sugar flowers to soften, so it’s important to place them on the cake close to the timing of the cake’s display.
The good news is that the cake almost always reaches its best-by date before the sugar flowers do.
Fresh flowers on a cake are more likely to wilt in the conditions and long hours of a wedding day. Sugar flowers are made to hold up through the same conditions.
Once the cake has been cut and served, set the sugar flowers aside. Give them time to harden again, and clean them up so you can show them off as wedding day mementos, or store them long-term for a sentimental vow renewal cake.
